Humbly brewed in honor of our good friends Shantel and Dominik to commemorate the start to a fantastic new life together as husband and wife. Despite Dominik loving all things hoppy, hazy, and IPA, we decided to stick to our roots and brew a traditional German Pilsner. Escondido, which means “hidden city,” is the place the four of us have chosen to call home. We are so incredibly fortunate to have ended up in the same city as Dom and Shanti and also why it so clearly made sense to make it the name of our beer, in their honor. This Pilsner is brewed using old world brewing methods, namely, decoction brewing where a thick part of the mash is removed and boiled, then reintroduced back into the mash to heat it and produce rich flavors and deeper yellow color. True to the Pilsner style, only noble hop varieties are used, in this case it was Saaz as a nod to the brewer’s Czech heritage. The decoction process enhances fermentability of the beer and in this case it finished nearly bone dry but still retains great body and roundness. Cheers to Dom and Shanti!
